Guys, I have big news: this is officially the new avocado toast. It's still green, it's still delicious...but its peas! It has a little more texture than avocado toast does, and it's got a really yummy, refreshing flavor. I promise you'll love it.
The peas are lightly sauteed in olive oil with shallots and garlic, because those things just make everything better. This mixture tastes amazing as is, but we aren't done yet! Blended in the food processor with lemon and mint, the flavor just hits a new level. The delicate flavor of the spread would make it beautiful on a fancy crostini, but we like it just as much rustically spread on a simple piece of whole wheat toast.
Minty Smashed Peas on Toast
Serves 4
Ingredients
- 3 tablespoons olive oil, divided
- 1 large shallot, thinly sliced
- 1 garlic clove, minced
- 3 cups peas (fresh or frozen and thawed)
- juice and zest of half a lemon
- pinch each salt and pepper
- 1/4 cup mint leaves
- 8 slices whole wheat toast
Heat one tablespoon olive oil in a sautee pan over medium heat. Add the shallot and cook for 2 minutes. Add the peas and garlic, and continue cooking for another 2-3 minutes.
Transfer peas to a food processor. Add the lemon juice and zest, the salt and pepper, and the remaining 2 tablespoons of olive oil. Pulse the mixture until it is pureed, but still retains some texture. Add in the mint leaves and pulse a few times to combine. Taste, and season with more salt and pepper if needed!
Spread on the toast and enjoy!
