Okay, I'll be the first to admit it- this is not the prettiest dish I have ever made. In fact, it might be up there with one of the ugliest. But when it comes to what counts—how it tastes—this easy dish is one of the best. I am always looking for new things to make for dinner that incorporate a good balance of whole grains, veggies, and protein, and this dish ticks every one of those boxes.
This fried rice falls under the comfort food category for me. It is warm, rich from the eggs, and savory from the mushrooms and the sesame oil. It is also easy to customize with your favorite veggies—throw in some spinach, broccoli, or whatever you have in the fridge that you are ready to get rid of. Additionally, this is a great way to use rice that you might have leftover from takeout you had a few days ago (why do they always give you so much rice? I guess to make yummy things with it!). I know this recipe is going to be one that I return to again and again, and I hope you do too!
Mushroom Fried Rice
Serves 2-4
Ingredients
- 2 tablespoons olive oil, divided
- 16 oz. cremini mushrooms, sliced
- 3 garlic cloves, minced
- 1/2 teaspoon freshly grated ginger
- 2 large eggs, lightly beaten
- 1 1/2 cups cooked brown rice
- 2 Tbs low sodium soy sauce
- 1 Tbs toasted sesame oil
- 2 tsp toasted sesame seeds
- 4 green onions, thinly sliced
Instructions
Heat 1/2 tablespoon of oil in a large skillet over medium heat. Sauté the mushrooms until soft and lightly browned, about 5-6 minutes. Add garlic and ginger and continue cooking for another minute.
Remove mushrooms from skillet and place them in a medium bowl; set aside. Keep skillet at medium heat and add 1/2 tablespoon oil to skillet. Add eggs and scramble, using a spatula to break them into pieces as they cook. Remove from skillet and place into the bowl with the mushrooms.
Add the remaining tablespoon of olive oil to the skillet and heat over medium heat. Add the rice to the skillet and cook until it's toasted and brown, about 4 to 5 minutes. Stir in the soy sauce and sesame oil. Add the mushrooms and eggs and stir to coat. Stir in the sesame seeds and the green onions and mix everything together. Reduce the heat to low and cook until everything is warm and has come together. Serve immediately!
