What's with us vegetarians loving stuffed things? Stuffed squash, stuffed tomatoes, stuffed pasta shells...we love it all. I guess the thinking is why eat one delicious thing when you can stuff something else delicious in it and eat two yummy things at once, am I right? I've toyed with the idea of going gluten-free...and by toyed I mean think about it for around 30 seconds and then start remembering all the reasons why it would be too hard for me. But when it comes to what counts- how it tastes- this easy dish is one of the best.
