Muffins might just be my absolute favorite thing to bake. I love that they are already individually sized, perfect for anything from breakfast to a midnight snack. And these banana crumb muffins are exceptional, let me tell you. Moist, flavorful, with a buttery crumb topping that just puts them over the edge.
I love crumbs! Is that weird? But what can I say, the crumb topping on coffee cakes, doughnuts, or in this case, muffins, has always been my absolute favorite. Rich, sweet, and a little salty, the crumb top on these muffins will fool anyone into thinking you got them from a bakery. A really, really good bakery.
Banana Crumb Muffins
Makes about 9 muffins
Ingredients
- 1 1/3 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 large egg
- 1/3 cup packed brown sugar
- 2 large, ripe, bananas
- 1 teaspoon vanilla
- 3 tablespoons unsalted butter, melted and cooled
- scant 1/2 milk (I used almond milk, but use whatever you have)
crumb topping
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup butter, melted
- 1 cup all-purpose flour
Instructions
Preheat the oven to 350°F. Line a muffin tin with paper liners or spray with cooking spray.
Whisk flour, baking soda, salt and cinnamon in a medium bowl. In a large bowl, whisk the egg and brown sugar together until smooth and no lumps remain. Add the bananas, mashing and combining them into the sugar mixture. Add the vanilla and butter, whisking until combined. Add in dry ingredients, stirring with a rubber spatula until just combined and no white streaks remain. Stir in milk and mix until just combined.
For the crumb topping: whisk together the brown sugar, granulated sugar, cinnamon, salt, and melted butter until combined (this will take a couple of minutes). Use a wooden spoon to stir in the flour until the mixture is crumby!
Fill each muffin liner about 2/3 of the way full with batter. Top them with the crumb topping.
Bake until slightly golden, 15 to 17 minutes.
