I just found your new favorite granola recipe. This stuff is just so good! It's called oatmeal cookie chia granola because it is just that- granola that tastes like cookies, and is packed with those delicious little chia seeds.
The oatmeal cookie flavor comes from a couple of different ingredients- the oats, the cinnamon, the brown sugar, and most importantly the browned butter. And I don't know about you, but my oatmeal cookies have chocolate chips and not raisins, so that's what my granola has too. This granola is super adaptable too- use whatever you have in your pantry! No almond flour? How about some flax seeds? No walnuts? Try pistachios? That browned butter though? That's not negotiable.
Oatmeal Cookie Chia Granola
Makes 4 cups
- 2 1/4 cups old fashioned oats
- 1/2 cup slivered almonds
- 1/2 cup chopped walnuts
- 1/4 cup almond flour
- 1/4 cup chia seeds
- 1 tablespoon light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup honey
- 2 tablespoons unsalted butter
- 2 tablespoons coconut oil
- 2 teaspoons vanilla extract
- 1/2 cup miniature chocolate chips
Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.
In a large bowl whisk together the oats, almonds, walnuts, almond flour, chia seeds, brown sugar, cinnamon, and salt.
Heat a small saucepan over medium heat and add the butter. Melt the butter and allow it to brown, swirling the pan occasionally, until it's amber in color and smells nutty. Reduce the heat to low, and add the honey, coconut oil, and vanilla extract. Stir until the liquid is warm and the ingredients have melted together.
Remove the pan from the heat and pour the mixture over the oats. Stir it with a large spoon to coat and bring the mixture together. Spread it evenly over the parchment covered baking sheet.
Bake for 10 minutes, then use a spatula to toss the granola. Bake for 10 minutes and toss again. Bake for a final 10 minutes, tossing twice during the cooking time. Remove the pan from the oven and allow it to cool 5 minutes. Sprinkle the chocolate chips over the granola and toss together. Let the granola cool completely on the baking sheet.
